Delicious dairy-free chocolate banana marble loaf cake, made with overripe bananas, without butter, milk, or margarine.
Ingredients
- 1 ¾ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ⅓ cup oil
- 1 cup white granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract or good imitation
- 3 overripe bananas (very ripe is fine), mashed
- ½ cup water
- ½ cup dairy-free semi-sweet chocolate chips or dairy-free chocolate, melted*
Instructions
- Combine flour, baking powder, baking soda, salt, and sugar.
- Mix in oil, eggs, water, and vanilla.
- Mix in mashed bananas to form a banana batter.
- Melt chocolate.
- Separate half of the banana batter.
- Pour one of the halves of batter into a loaf pan* that has been coated with oil or baking paper.
- Mix the melted chocolate well into the other half of the batter to create a chocolate banana batter.
- Spoon the chocolate banana batter onto the batter in the pan.
